Can also be lunch with a mixed salad or warmed up roasted veggies and are perfect to have “on the go” – 2 quiches/muffins per serving provides almost 30g protein.
Ingredients:
- 1 tsp extra virgin olive oil
- 2 large eggs
- sea salt
- black pepper
- 50g smoked salmon
- 20g spinach
- 10g grated parmesan
Method:
- Preheat oven to 180, gas mark 4
- Grease muffin tray with olive oil or line with parchment
- In a bowl whisk the eggs with the S&P, then fold in the parmesan
- Divide the salmon and spinach into the muffin moulds and pour over egg mixture
- Bake for 10-15 minutes or until the mixture has set with a golden top
