Can also be lunch with a mixed salad or warmed up roasted veggies and are perfect to have “on the go” – 2 quiches/muffins per serving provides almost 30g protein.

Ingredients:

  • 1 tsp extra virgin olive oil
  • 2 large eggs
  • sea salt
  • black pepper
  • 50g smoked salmon
  • 20g spinach
  • 10g grated parmesan

Method:

  • Preheat oven to 180, gas mark 4
  • Grease muffin tray with olive oil or line with parchment
  • In a bowl whisk the eggs with the S&P, then fold in the parmesan
  • Divide the salmon and spinach into the muffin moulds and pour over egg mixture
  • Bake for 10-15 minutes or until the mixture has set with a golden top
