Serves 1
Ingredients:
- 50g mushrooms of choice
- 50g baby spinach leaves
- 2 large eggs
- Salt & pepper
- chives
- 1tbsp extra virgin olive oil
Method:
- Heat olive oil in a frying pan and gently heat the mushrooms
- When mushrooms appear cooked add in the spinach to wilt
- Remove from the heat and set aside
- Whisk the eggs with S&P, pore them into a frying pan and add the mushroom, spinach and chives
- Place the lid on the pan and cook on low heat until the eggs are cooked
