Serves 1

Ingredients:

  • 50g mushrooms of choice
  • 50g baby spinach leaves
  • 2 large eggs
  • Salt & pepper
  • chives
  • 1tbsp extra virgin olive oil

Method:

  • Heat olive oil in a frying pan and gently heat the mushrooms
  • When mushrooms appear cooked add in the spinach to wilt
  • Remove from the heat and set aside
  • Whisk the eggs with S&P, pore them into a frying pan and add the mushroom, spinach and chives
  • Place the lid on the pan and cook on low heat until the eggs are cooked
