Serves 1: 25g protein
Ingredients:
- 1/4 red onion sliced
- 1/2 red pepper sliced
- 1 portobello mushroom, sliced
- 1/2 tsp ground paprika
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- 1/4 ground coriander
- 2 tsp extra virgin olive oil
- Salt & pepper
- 25g plain full fat greek yogurt
- 1/4 lime zest and juice
- 80g halloumi sliced
- 1/2 baby cos lettuce
- Fresh coriander (optional)
Method:
- Toss the onion, peppers, and mushrooms in the spices with half the oil and salt & pepper
- Heat frying pan over medium heat and add the veggies
- Cook for approx 10 mins until browning
- Whilst veggies cook, mix the yogurt, lime juice/zest with a pinch of salt
- Remove veggies from the pan and heat remaining olive oil. add the halloumi and cook each side for 1-2 ins until crispy
- Return veggies to the pan to reheat and mix with halloumi
Scoop mix into lettuce leaves and top with yogurt/coriander
