Serves 1: 25g protein

Ingredients:

  • 1/4 red onion sliced
  • 1/2 red pepper sliced
  • 1 portobello mushroom, sliced
  • 1/2 tsp ground paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 ground coriander
  • 2 tsp extra virgin olive oil
  • Salt & pepper
  • 25g plain full fat greek yogurt
  • 1/4 lime zest and juice
  • 80g halloumi sliced
  • 1/2 baby cos lettuce
  • Fresh coriander (optional)

Method:

  • Toss the onion, peppers, and mushrooms in the spices with half the oil and salt & pepper
  • Heat frying pan over medium heat and add the veggies
  • Cook for approx 10 mins until browning
  • Whilst veggies cook, mix the yogurt, lime juice/zest with a pinch of salt
  • Remove veggies from the pan and heat remaining olive oil. add the halloumi and cook each side for 1-2 ins until crispy
  • Return veggies to the pan to reheat and mix with halloumi
    Scoop mix into lettuce leaves and top with yogurt/coriander
