Ingredients & Method:
- Use 2 to 3 eggs and whisk
- In a pan heat either veggies, chopped peppers, onion, in a little oil
- Add the egg and heat through
- Before fully cooked add some spinach and goats cheese to both (optional)
- Fold in half and cook gently
- Serve with a fresh salad with cucumber, avocado, pumpkin seeds with a drizzle of olive oil and lemon juice
