Serves 8
Ingredients:
- 3 fennels
- 50ml olive oil
- 2g sea salt
- 1g fresh black pepper
Pea dressing:
- 100g fresh of frozen peas
- 1 bunch fresh mint
- 50ml olive oil
- 1 organic lemon
- 1g sea salt
- Pepper
Method:
- Remove the top of the fennel and halve the fennel length ways. Then cut into long “boats”
- Turn the fennel in olive oil, salt & pepper then grill for 2-3 minutes on each side (either pan or BBQ). The pieces should be cooked but firm
- Place the pieces into a dish
- Cook the peas and then blend with 2/3 of the mint, olive oil, lemon zest and juice, salt & pepper until a smooth dressing. Add a little water to thin out if required
- Pour onto the fennel and sprinkle the remaining mint leaves on top
