Serves 8

Ingredients:

  • 3 fennels
  • 50ml olive oil
  • 2g sea salt
  • 1g fresh black pepper

Pea dressing:

  • 100g fresh of frozen peas
  • 1 bunch fresh mint
  • 50ml olive oil
  • 1 organic lemon
  • 1g sea salt
  • Pepper

Method:

  • Remove the top of the fennel and halve the fennel length ways. Then cut into long “boats”
  • Turn the fennel in olive oil, salt & pepper then grill for 2-3 minutes on each side (either pan or BBQ). The pieces should be cooked but firm
  • Place the pieces into a dish
  • Cook the peas and then blend with 2/3 of the mint, olive oil, lemon zest and juice, salt & pepper until a smooth dressing. Add a little water to thin out if required
  • Pour onto the fennel and sprinkle the remaining mint leaves on top
