serves 1 (prepare night before) NB: Make a batch which keeps for 3 days.

Ingredients:

  • 25g whole rolled oats
  • 10g chopped almonds
  • squeeze of lemon juice
  • 1/2 grated apple
  • 100g plain full fat greek yogurt / or skyr to increase protein
  • 30ml water
  • 35g blueberries
  • 20g mixed sunflower/pumpkin seeds
  • optional: scoop natural protein powder

Method:

  • Mix the oats and almonds in a bowl and stirĀ in the lemon and grated apple
  • Mix in the yogurt and water until the mixture is quite “sloppy”
  • Cover and leave overnight
  • Serve with blueberries and seeds
