- Fish of choice: Suggested mix of salmon and cod (600g total) for 4 people.
- 1-2 garlic cloves crushed
- 1 spring onion finely chopped
- Lemon grass if desired
- Pinch of spice
- Lemon juice
- Handful dill or coriander (or mix)
- Pinch of cayenne
Method:
- Simply blend all ingredients in a food processor until it binds well.
- Form small flat patties and fry gently in coconut oil for a few minutes on each side (until browned and cooled through).
Vegetarian/Vegan Option
Pea falafels (serves 3-4)
- 150g defrosted peas
- 150g steamed broccoli
- 200g chickpeas
- 2 garlic cloves
- 1 small onion
- 2 teaspoons cumin
- 2 handfuls flat leaf parsley
- 1 tablespoon chopped mint
- Juice of 1-1½ lemons
- Olive oil/coconut oil to cook
Method:
- Blend the peas, broccoli, chickpeas, garlic, onion, cumin, parsely, mint, salt and lemon juice in a food processor.
- Form into round balls (perhaps using an ice cream scoop)
- Fry the falafels in a wok with oil. If the mixture is too moist, roll in some chickpea flour or dukkah.
Serve with Black rice precooked and add a little coconut milk at the end to bind.
