In a large blender add:
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 2 tsps balsamic vinegar
- juice of 1/2 lemon
- 1 crushed garlic clove
- 1 handful basil leaves
- 1 tbsp tomato paste
- 1 small jar of tomatos or use 10 ripe tomatoes pre-soaked in boiling water
Method:
- Blend all of the above and add a little water if it needs thinning out.
- Serve topped with chopped cucumber and peppers
- A side salad of mixed green leaves, olive oil/lemon juice, and toasted seeds works well with this
