In a large blender add:

  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 tsps balsamic vinegar
  • juice of 1/2 lemon
  • 1 crushed garlic clove
  • 1 handful basil leaves
  • 1 tbsp tomato paste
  • 1 small jar of tomatos or use 10 ripe tomatoes pre-soaked in boiling water

Method:

  • Blend all of the above and add a little water if it needs thinning out.
  • Serve topped with chopped cucumber and peppers
  • A side salad of mixed green leaves, olive oil/lemon juice, and toasted seeds works well with this
