  • Use 2 eggs and whisk
  • In a pan heat either veggies, chopped peppers, onion, in a little oil, OR salmon piecesĀ and spring onion
  • Add the egg and heat throug
  • Before fully cooked add some spinach and goats cheese to both (optional)
  • Fold in half and cook gently
  • Serve with a fresh salad with cucumber, avocado, pumpkin seeds with a drizzle of olive oil and lemon juice
