Baked fennel with thyme
Serves 4
2 large fennels cut into boats
50ml olive oil (3 tablespoons)
4 stems of fresh thyme
100g soft goats cheese
Handful of pomegranate seeds of alternatively dried cranberries
Salt & Pepper
Place the fennel onto a baking tray covered with greased baking paper., top with more olive oil and small pieces of thyme, S&P
Bake at 200 degrees for approximately 15.20 minutes (until soft and golden)
Place onto serving dish and top with pieces of goats cheese and pomegrate seeds
