Creamy broccoli, leek and apple soup

Serves 4

1 leek, sliced
1 broccoli head in florets and chopped stem
1 large baking potato, peeled and cut into squares
1 onion finely chopped
2 garlic cloves, crushed
1 eating apple finely chopped
1 litre veggie stock or other bone broth
100ml coconut cream
Oil for frying

Optional: microgreens to top
Meat option: dried bacon pieces

Heat oil in a pan and add the leek, potato, onion and garlic. Saute gently for a couple of minutes then add the apple and broccoli, continuously stirring whilst sauteing another 2 minutes.
Add the stock and bring to a boil. Allow to simmer gently for 20 minutes.
Either using a hand blender in the pan or blender jug, blend well. Add the coconut milk and reheat.
Add S&P to taste and serve topped with microgreens/bacon pieces or both.

TIP: A pinch of chilli also give a delicate “kick”
