Melon & Mint Summer Soup
Serves 2
1 small honey melon, chopped & deseeded
3 sprigs of fresh basil – leaves removed
4 sprigs of fresh mint – leaves removed
zest & juice of 1 lime
sea salt & pepper
optional: add a pinch of cayenne pepper to pep it up if desired.
A good way to use those sweet melons that are in season now, along with fresh mint and basil that is easily grown in a pot at this time of year. This recipe is so quick to make and light and refreshing to eat. Perfect for these hot summer days and evenings. Only 4 staple ingredients needed!
This is a cold soup and could be used as a starter or as a refreshing lunch with a side salad.
Add to a food processor and blitz on medium setting until herbs are well integrated.
Serve immediately or chill for another 20 minutes before serving.
