A great way to use up some rice from a previous evening meal.  Cold rice is great for the gut as it is high in resistant starch.

  • Leftover rice (cold)
  • Chopped peppers
  • Onion (Spring onion is good)
  • Crushed garlic
  • A little courgette
  • Spinach
  • Add a boiled egg or tofu chucks if desired

Method:

  • Chop the veggies and either eat raw, or gently heat for 5 minutes in a pan.  A little tamari, lime juice and coriander can add lots of flavour.
  • Once cooked, mix with the rice and serve.  
  • If desired add boiled egg, tofu chunks or any other protein source (hummus) as desired
