A great way to use up some rice from a previous evening meal. Cold rice is great for the gut as it is high in resistant starch.
- Leftover rice (cold)
- Chopped peppers
- Onion (Spring onion is good)
- Crushed garlic
- A little courgette
- Spinach
- Add a boiled egg or tofu chucks if desired
Method:
- Chop the veggies and either eat raw, or gently heat for 5 minutes in a pan. A little tamari, lime juice and coriander can add lots of flavour.
- Once cooked, mix with the rice and serve.
- If desired add boiled egg, tofu chunks or any other protein source (hummus) as desired
