Any leftovers from last night (meat or veggies)? If not heat up some quinoa (you may prepare more and keep this to add to other dishes or sue for the quinoa & veggie side dish in recipes)
- Chop up a selection of veggies such as: Cucumber, avocado, tomatoes, radishes, grated carrot, peppers
- Add some fruit such as mango pieces, blueberries
- Place 3-4 tablespoons of quinoa in a bowl
- Add any beans/peas you may like: chickpeas, green beans etc
- Place you selected fruit and veggie on top
- Consider sprinkling sunflower, pumpkin, sesame, hemp seeds in the salad
- Add Ons: feta, egg, leftover chicken, salmon, tinned sardines, edamame beans, tofu, kimchi
